🇬🇧 Is a Spanish food writer and a cook who is an expert on Spanish gastronomy and wine. She was the first Spaniard to obtain the Diploma of the Wine and Spirit Education Trust back in the 1980’s. She developed her professional career in the United Kingdom where she has written a number of books as well as writing and presenting for television.
🇪🇸 Es un escritora gastronómica española y cocinera experta en gastronomía y vinos españoles. Fue la primera española en obtener el Diploma of the Wine and Spirit Education Trust allá por los años 80. Desarrolló su carrera profesional en el Reino Unido, donde ha escrito varios libros, además de escribir y presentar para televisión.
Career
Early in her career she moved from Spain to England where she has spent most of her professional life. Now she divides most of her time between London and the Sierra de Aracena in Andalucia.
In 1989 she published her book «Life and Food in the Basque Country» describing her travels through the different areas of the Basque Country and how its inhabitants reflect their identity in their food. Other books followed, «Spain on a Plate: Spanish Regional Cookery»(1992) and «Mediterranean Flavours. Savouring the Sun» (1997).
Since 1998 she headed the department «Foods from Spain» later including “Wines from Spain” at the Economic and Commercial Office of Spain ICEX) in London. The work involved promotion and market analysis as well as facilitation of trade in food and wine in the U.K. In 2019, she was profiled in the “Drinks Business Magazine” as one of the most influential women in the Spanish wine industry. She has for many years now been a member of the British Guild of Food Writers.
Sevilla has worked as consultant, presenter and scriptwriter on several food series for television in Britain. In 1992 the year of the Olympics in Barcelona she began her series for the BBC called ‘Spain on a Plate’. In this series of films Sevilla travels through different food regions of Spain showing the range and diversity of the “Cocinas”. In addition to her work in the United Kingdom and Spain, she has participated in international conferences and presentations in the United States, Australia, Canada and Japan. She has for a number of years been a visiting chef at the Culinary Institute of America at Graystone.
In November 2019, her most recent book was published, «Delicioso: A history of Food in Spain». In this book which is fully illustrated, she explores from different perspectives, the many influences on Spanish gastronomy. It delves into the historical context of Spanish food, as an amalgam of flavours, cultures and ingredients. This book is part of the «Foods and Nations» series, published by Reaktion Books.
In an interview with the Press she said “I try to write about things I like most about my country, history, people and food; how we like to relate to each other and how we use gastronomy as a social art. Actually, Spanish cuisine, as such, does not exist. What exists is a number of unique regional food cultures including Basque, Andalusian, Catalan and Galician among others. Some are more complex than others but all are part of our Spanish cultural legacy.

🇬🇧 The Gran Hotel Inglés, the oldest hotel in Madrid, opened its doors for the first time in 1886. Located in one of the first streets with electricity, was the first hotel in Madrid to have its own restaurant. An iconic e historic hotel in the center of Madrid, that combines urban sophistication with the glamour of bygone times.
